FERMENT 5-day cold soak. 14-day fermentation in open-top tank. Careful tannin management through twice daily pumpovers at start of fermentation; three daily pumpovers at peak; gentle punchdowns in waning phase, before press.
AGING 21 months in French oak, 100% new. Never racked. Bottled unfined, unfiltered.
NOTES Continuing on 2015’s winning formula, again we opted for a strict barrel-selection to create 2016’s “Borrowed Jewels” bottling. A study in indulgence and charm, red and black fruits dominate the palate, as textures fill-in every nook and cranny. Never over the top, but always at the red-line.
