VARIETAL 100% Chardonnay
CRUSH Night harvested by hand, beginning in mid-October, finishing up on November 1st (our latest ever Chardonnay pick). Whole-cluster pressed at low pressures, over multiple hours. Gently settled overnight before barreling down.
FERMENT Native primary and secondary fermentations occur in barrel on their fine lees.
AGING 11 months in French oak barrels, primarily once-used. Never racked prior to bottling. Bottled un-fined, unfiltered.
NOTES Raised by minimalistic methods, often associated with the classic Chardonnay winemaking techniques of Meursault. With a focus on the coolest Chardonnay region in Sonoma County, 2018’s long, even growing season favored our vineyards’ moderate climate, old vines and deep volcanic soils. These grapes were allowed an extended ripening period on the vine, resulting in perfect balance and concentrated flavors.
