CRUSH Night harvested by hand across the tight two-week period of September 26 through October 11. Cluster and berry sorted by hand, de-stemmed save for 15% whole-cluster inclusion, no crushing
FERMENT 7-day cold soaks, followed by native fermentation in open-top containers, with the juice fermenting on its skins for an average time of 14 days.
AGING 16 months, French oak barrels, 10% new, remainder once-used. Never racked prior to bottling. Bottled un-fined, unfiltered.
NOTES An especially rainy Spring slowed the onset of 2019’s growing season. This late start had the vines playing catch-up throughout the relatively warm summer months. As harvest neared, Mother Nature delivered a series of sustained heat-spikes, immediately followed by significant cooling. These dramatic swings played perfectly into our hands, allowing the opportunity to patiently wait while the vines ripened their fruit to significant flavor accumulation, while remaining balanced and fresh. The resulting wine is rich, dark and opulent, with a deeply fruited palate, invigorating freshness and beautifully ripe tannins.
